The Wood Family has been producing Pure Maple Syrup for 7 generations in Wisconsin. Our Family farm is located in Spring Valley Wisconsin approximately 40 miles east of the Twin Cities.
Production is usually in February and March depending on weather conditions. Freezing nights and warm days are needed to induce sap flows. To collect the sap, holes are bored into the maple trees and spiles are inserted and connected with tubing. Sap flows through the tubing under partial vacum and assisted through natural flow of gravity into the holding tanks at the syrup house.
In it's orginal state, it takes approximately 40 gallons of sap to be boiled down to 1 gallon of syrup. Prior to cooking, the sap is pumped through a reverse osmosis process to remove approximately 75 - 80% of the water from the sap prior to boiling, reducing the amount of time and energy consumption it takes to produce the syrup. During cooking, the sap is fed automatically from the reverse osmosis system to the evaporator. As the sap boils, the water evaporates; it becomes denser and sweeter. As the density of the sap increases, it works its way from the rear of the back evaporator pan to the second evaproator which is our finishing pan, then once the syrup is boiled until it reaches the correct density. This is achieved when the sap has reached a temperature of 219 °F (104 °C). The density is tested with a hydrometer. If the density is too low the syrup will not be sweet enough and the syrup will spoil. If the density is too high the syrup will crystallize in bottles. When the syrup has reached the proper density, it is drawn off, filtered and stored in bulk containers until bottled for resale, bulk purchases and for sugar production.
In addition to our Pure Maple syrup, we also boil the syrup down further to make grandular maple sugar and maple cream. Granular maple sugar is available on a regular basis, however, maple cream is available for a limited period of time each year usually during the holiday season.
